*Ingredients:*
500g of frozen cassava leaves (pondu)
A bunch of green onions
1 bulb of garlic
2 yellow onions
1 leek
2 green peppers
1 cup of palm oil
2 Tbsp of salt
1 sardine (or any protein like meat or shrimp)
Green habanero pepper (optional)
Water (for boiling)

*Steps:*
1. Place the frozen cassava leaves directly into a large pot.
2. Add enough water to fill the pot halfway, then bring it to a boil. Let it cook until the leaves are tender and the water reduces slightly.
3. While the leaves are boiling, chop the green onions, garlic, yellow onions, leek, and green peppers into small pieces.
4. In a separate pan, heat the palm oil.
5. Add the chopped yellow onions, leek, and garlic to the hot oil, frying until they turn translucent and fragrant.
6. Add the chopped green peppers and cook for a few more minutes.
7. Stir in the salt and your protein — I used a sardine, but you can use any protein you prefer (meat, shrimp, etc.).
8. Pour the cooked vegetables and oil mixture into the pot with the boiling cassava leaves. Mix everything well.
9. Add the green habanero pepper if you like some heat.
10. Lower the heat and let everything simmer together for about 10-15 minutes, allowing the flavors to meld.
11. Serve hot alongside rice for a hearty, delicious meal!
