What is Kao Leng Mian (烤冷面)?
The name of this dish didn’t really make any sense - Kao Leng Mian (烤冷面), which literally translates to grilled/barbecue cold noodles. This dish is rarely seen in restaurants and often sold in night markets or street food stands in China. It consist of a thin slice of paper-like noodle, eggs, onions and other ingredients that are customisable. It is drizzled with a sweet bean sauce, and based on personal preferences, chili sauce.
There are multiple ways to cook this dish - teppanyaki(the one seen in this video), barbecue and fry. The cooking process is similar to that of a Chinese jian bing.
