💡Ingredients and Instructions
(for a 8'' (20 cm) round cake)
⭐️Sautéed Pineapple
80g (⅓ cup) sugar
40g (3 tbsp) water
50g (3½ tbsp) butter, cubed, room temp
~ 340g (1 can) pineapple slices, in juice
80g (½ cup) maraschino/cocktail cherries

Line a tray with a kitchen towel, arrange pineapple slices and maraschino cherries on it, use another layer of towel to absorb any excess liquid. Set aside
In a saucepan, combine sugar and water, covering the sugar completely. Close the lid for a minute to prevent crystallization if needed. Watch carefully as the mixture boils; it can quickly turn brown around the edges of the pan.
Once the sugar turns golden in color, remove from heat. Add the butter and stir until fully absorbed.
Arrange pineapple slices and cherries into a bottom of the 8” (20 cm) round baking pan
Pour the caramel sauce into the pan over the fruits, reserving a little for brushing on top of the cake after baking.

125g (½ cup) Unsalted butter, cubed, room temp
100g (½ cup) Sugar
A pinch of Salt
75g (1½) Egg, beaten
115g (1 cup) Cake flour
3g (⅓ tsp) Baking powder
30g (1½ tbsp) Almond powder

In a mixing bowl, mash butter, sugar, and salt until smooth.
Whisk in the egg until well combined.
Sift in cake flour, baking powder, and almond powder, whisking until fully incorporated.
Pour the cake batter into a baking pan over the caramelized pineapple and bake at 350°F (180°C) for about 40 minutes.
Take the cake out of the oven, flip it over onto a plate, and brush the top with the remaining caramel sauce
Cut into desired size and enjoy.
