🍳 CHEESY RICE OMELETTE | Easy & Delicious Recipe
An incredible recipe that combines toasted rice with creamy eggs, fresh vegetables, and loads of melted cheese! Perfect for breakfast, lunch, or dinner. Crispy on the outside, soft on the inside — impossible to resist!
📝 INGREDIENTS
Rice Base:
1 cup white rice (long grain)
2 cups water
2 tablespoons vegetable oil
Egg Mixture:
4 large eggs
150g (⅔ cup) plain yogurt
Salt to taste
Black pepper to taste
1 teaspoon granulated garlic (or garlic powder)
Vegetables:
3 green onion stalks (chopped)
2 medium Roma tomatoes (diced)
Topping:
Grated Parmesan cheese (to taste — be generous!)
Fresh parsley, chopped (for garnish)
👨🍳 INSTRUCTIONS
Toast the rice: Heat oil in a large non-stick skillet. Add the uncooked rice and stir until lightly toasted and fragrant.
Cook the rice: Add water, cover with a lid, and cook for approximately 15 minutes until the rice is tender and water is fully absorbed.
Prepare the egg mixture: While the rice cooks, crack the eggs into a mixing bowl. Add salt, pepper, and granulated garlic. Beat well with a fork until combined.
Add vegetables and yogurt: Chop the green onions and dice the tomatoes. Add them to the egg mixture along with the plain yogurt. Mix everything together until well combined.
Assemble: With the cooked rice still in the skillet, pour the egg mixture over the top. Spread evenly. Cover and cook over medium-low heat for 8-10 minutes until set.
Flip: Use a large plate to flip the omelette, golden side facing up.
Add cheese: Generously cover with grated Parmesan cheese. Cover and cook for an additional 4-5 minutes until the cheese is completely melted and bubbly.
Serve: Garnish with fresh chopped parsley, slice into wedges, and serve hot!
💡 TIPS & VARIATIONS
Use a good quality non-stick skillet to make flipping easier
The yogurt makes the omelette super creamy — don't skip this ingredient!
Feel free to add other vegetables like bell peppers, corn, or peas
