This short clip demonstrates how to use a funnel and a baster to separate the fat from the braising liquid left from a rack of pork ribs. Plug the tip of the funnel with the baster by pushing the baster tip into the funnel and gently squeezing the bulb while you push the funnel tip through the fat floating on top of the juice. You now have a window through the fat into the juice. Using the baster, suck out the juice and squirt it into another container, leaving the fat in the original container. This works best when the original container is a tapered measuring cup so that you can get out the most juice and leave all of the fat behind.
After tiring of cleaning up a glass separation pitcher/funnel too many times, I thought that this might offer an alternative for doing the fat separation job. And it actually does a better job than I expected. It seems to work best when the funnel opening is the same size as the baster tip so that when I poke them through the floating layer of fat (while gently squeezing the bulb to keep from trapping fat in the tip) almost no fat makes it into the pool from which I then draw the fat-free juice. And when I get to the bottom of the measuring cup there is a clear boundary that tells me when to quit (photo here: http://bit.ly/2k0G1p4). Very efficient, inexpensive, and easy to clean up too.
