My menu for this week:
Pancakes (everyday! Without blueberries and sweet potato towards the end of the week)
-1 yam (pre cooked, skinned)
-1 1/2 cup flour (any!)
-1 tsp baking soda
-1 tsp baking powder
-2 tbl cinnamon
-1 cup water (add more if needed!)
-blueberries
*I blend my ingredients in a high speed blender but you can also use a food processor. Bake like a bundle of pancakes, making them any size you’d like and enjoy! (This recipe yields 7 large pancakes for me!)
Mango rice bowls (Lunches for 4 days)
-3 cups brown rice (rinsed)
-1/2 can enchilada sauce
-1 tsp garlic powder
-4 cups water
*Cook in your instant pot on “rice” for 14 minutes
*Add half a cooked onion, a whole chopped mango, 3 cups cooked black beans and some soy sauce to season!
-Flatbread (dinner for 1 night) *Dough recipe in my holiday ebook!
-leftover frozen veggies
-black beans
-1/2 cup enchilada sauce
-Hashbrowns & Veggies (Lunch for 1 day)
*Air fried
-4 pre cooked potatoes
-8oz mushrooms
-1/2 onion
-green beans (I cooked mine in a skillet on the stove top with water and salt)
*Cut your hashbrowns, add onions and mushrooms and cook in your air fryer at 400 degrees for 12 minutes
-Ramen (Dinner for 1 night)
-2 packs ramen
-1/2 bag frozen edamame
-1/2 bag frozen veggies
-2 tbl Dijon mustard
-2 tbl soy sauce
-sprinkle of crushed red pepper
*I bring my edamame and veggies to a boil than add my sauces and ramen. Cook for 4 minutes and serve
Leftover/Quick no prep meals: (We used these to fill in for lunches and dinners as needed, we had so much rice, potatoes and beans this made meals so easy this week)
-Rice bowls
Rice, black beans, edamame or broccoli
-Air Fried Potatoes & Broccoli
Homemade bread:
3 cups flour
1 1/2 cups warm water
1 tsp salt
1/2 tsp yeast
*make dough and let rest for at least 3 hours
Oven set to 450 Put your bread tin in the oven while it’s pre heating. Once oven is preheated, remove pan and put in dough
Bake at 450 cover for 30 minutes, remove cover and bake for an additional 15 minutes
If you don’t have a Dutch oven, use two bread tins. One as the cover works perfect
INSTANT POT BEANS:
-Add any bean or lentil + 3 1/2 cups of water to your instant pot. Cook on manual for 30 minutes. You can add salt or any seasonings you may like
