Let's face it - getting toddlers to eat can be a labor of love! Involving them in the cooking process can be one of the most effective ways to encourage tasting new foods while modeling a lasting life skill. Join a 4-year-old breakfast cookie-making master as we walk through an easy and quick recipe that has become a staple in our home and has stood the test of time from starting solid foods. Keep in mind this recipe is nourishing for all ages!
Adding color to your plate with plant foods is one of the most effective ways to feel your best. Colorful Cooking at Home is designed to inspire, educate, and showcase how simple and delicious dishes can be! Join host Registered Dietitian Kerri Stewart from the Culinary Medicine Program each month as she navigates different topics and dishes with the common theme of color.
Ingredients:
1 ripe banana
1 egg white (3 Tbsp of All Whites/Egg Beaters) or
1 whole egg
*For plant-based version, create ground flaxseed “egg” with 1 TBSP ground
flaxseed and 2.5 TBSP water. Mix, and let set for a few minutes until gel forms. Add an additional 1 TBSP of unsweetened plant-based milk of your choosing.
1 teaspoon vanilla extract
1/3 cup quick-cooking oats
1/4 teaspoon baking powder
1 Tablespoon ground flaxseed
1 Tablespoon mini chocolate chips, raisins, blueberries, chia seeds, or other mix-in if desired
*For babies learning to eat, blueberries would be most appropriate for a mix-in and will soften and burst from cooking. You can also omit mix-ins. Avoid chocolate and dried fruit until the baby is older with established eating skills. Otherwise, this is an excellent way to introduce egg in a safe manner. Check with your pediatrician to make sure your baby has met necessary milestones before beginning solids.
Cinnamon
Instructions:
1. In a microwavable cereal bowl, mash the banana with a fork and mix in the egg. Whip it well. If opting for the plant-based version, mix ground flax and water in a separate bowl and set aside.
2. Stir in the vanilla extract.
3. Add the oats, baking powder, ground flaxseed, and sprinkle with cinnamon. Stir until fully incorporated.
4. Stir in the chocolate chips, blueberries, raisins or other mix-ins.
5. Microwave for 2 minutes. Cut into slices and enjoy warm!
