Ingredients
• 1 tosp olive oil
• (3/4 cup) 200 ml red wine
• (3/4 cup) 200 ml beef stock
• (1.5 pounds) 700g steak diced into cubes (1/2 pound) 250g baby potatoes
• (1/2 pound) 200g bacon diced
• (3/4 pound) 400g mushrooms quartered
• 1/2 tbsp dried thyme
• 1/2 tbsp dried parsley
• 1 bay leaf
• 1 white onion finely diced
• 1 tbsp minced garlic (frozen&defrosted)
• 2 tbsp tomato paste
• 1/2 tbsp Worcester sauce
• 1/2 tbsp light soy sauce
• 3 carrots cut into large slices
• (1.5 tbsp) 20 g Cornflour
• (2.5 tbsp) 35 ml water
• (1/2 pound) 300g Green Beans
Instructions
1. Add the oil to the inner pot and select the saute. Add the bacon and mushrooms, and fry until golden
(5-10 mins.)
2. Remove the mushrooms and bacon with a slotted spoon and set aside, leaving the oil behind.
3. Add the diced beef and brown on all sides (you may need to work in batches)
4. Once all the beef has browned, add the onions and sauté for 2 mins. Then add the garlic, tomato paste, herbs, red wine, bacon, mushrooms, and beef stock, Worcester sauce, soy sauce and potatoes.
5. Secure the lid, and select Pressure Cook and set the time to 35 minutes, with a 10 minute natural pressure release.
6. When the time is up, perform a quick pressure release, then remove the lid, and add the carrots and beans in a trivet above
7. Secure the lid again, select Pressure Cook and set the time for 2 minutes, followed by a quick pressure release.
8. When the time is up, pressure release, then remove the lid, and add the carrots and place trivet to one side with the beans, ready for serving.
9. In a small bowl, mix the corn flour with 75ml water to loosen it into a paste, then add to the beef bourguignon.
10. Select sauté and cook until the sauce has thickened,
