Recipe from The National Trust's "Kitchen Garden Estates"
Recipe:
175g (6 oz) soft margarine
175g (6 oz) caster sugar
3 eggs
225g (8 oz) self-raising flour
1/2 tsp ground nutmeg
115g (4 oz) carrot
115g (4 oz) parsnip
115g (4 oz) potato
115g (4 oz) eating apple
zest and juice of 1 orange
TO DECORATE
115g (4 oz) icing sugar
2 tbsp fresh orange juice
Preheat the oven to 180C (350F, Gas Mark 4).
Cream together the margarine and sugar and beat in the eggs.
Sieve together the flour and nutmeg and fold into the cake mixture along with the peeled and grated carrot, parsnip, potato and apple.
Stir in the orange zest and juice.
Turn into a 20cm(8in) diameter round cake tin and bake for 50-60 minutes until an inserted skewer comes out clean.
Turn onto a wire rack to cool.
To decorate, sieve the icing sugar into a bowl then beat in the orange juice until the mixture is smooth and thick enough to coat the back of the spoon.
Drizzle the orange water icing over the cake before serving.
