Cooking butternut squash was NOT in my list for long time as I though it would take ages to prepare! I'm glad a friend of mine showed me I was wrong. Here is how to make it for your baby in a nice and easy way.
Butternut squash is one of the most nutritious and healthiest vegetables you can give to your baby, with a rich array of vitamins, minerals and antioxidants as well as significant amounts of digestive fiber.
It is a great source of beta-carotene, as well as beta-cryptoxanthin and alpha carotene. It has high levels of vitamin C, as well as some vitamin E and vitamin K. It contains most of the B vitamins and is also usually a good source of important minerals such as magnesium, manganese, iron, copper, potassium, calcium, phosphorus and zinc.
