Ingredients:
Chickpeas/Kabuli Chana : 1 Cup
Corn Flour: 3 Tbsp
Rice Flour: 2 Tbsp
Garlic Pods with skin: 10-12 nos
Salt: As required.
Green Chilli: 4 nos
Masala:
Chaat Masala; 2 Tsp
Kashmiri red chilli powder:2 Tsp
Crushed kasuri methi: 2 Tsp
Coriander powder: 2 Tsp
Ginger Garlic powder: 2 Tsp
Oil for deep frying.
Method:
Rinse chana overnightg or for minimum 8 hours. Now boil them in a cooker for 1 whistle and then simmer for 3-4 minutes. Remove the pressure and let chana cool down to room temperature. Add corn flour, rice flour to chana and give it a good mix so that flour coats all the chana pieces. Heat oil for deep frying. First fry garlic pods on medium high flame. After that fry chana. At the end fry greenchillies carefully as they splatter. Make the special masala mix with coriander, kasuri methi,chaat masala and red chilli. This basuic masala will work well but if you have ginger and garlic powder it will just take it to the next level. Add ginger garlic powder and mix it. Heat a wok add 2 spoons of oil , add masala and all fried ingredients and give it a toss. Adjust salt and spice and serve hot!!!
