This makes 1 9” Pie
⦁ 8 ounces or 1 cup salted Virginia peanuts we are using Planters, also those with nut allergies, please be careful, these peanuts contain nuts, important safety tip on the jar, in case you were unaware!
⦁ 3 large eggs
⦁ 1 cup sugar
⦁ 1/2 cup all-purpose flower
⦁ 1 1/3 cup light corn syrup
⦁ 1 tablespoon unsalted butter, melted
⦁ 1 blind-bake 9-inch pie crust
⦁ Whipped cream (optional, but why not)
1. Preheat oven to 350 degrees
2. Next crush the peanuts with a rolling pin or mallet. Smashy smashy!
3. Lightly beat the eggs (like you are making scrambled eggs). Then whisk in sugar and flour until well combined. Add the corn syrup and peanuts, then add the melted butter.
4. Pour the filling into the pie crust. Bake 45-90 minutes or until the pie has a rich golden brown, is set around the edges but a little loose in the center. If the crust gets dark tent some foil around the edges of the crust.
5. Cool pie to room temperature and serve with whipped cream if desired.
