Honey Caramel Sauce
1/4 c unsalted butter
1/2 c plus 2 Tbsp honey
1 c heavy cream
1/8 tsp salt
1/2 tsp great quality vanilla
Combine ingredients in a medium saucepan and stir while cooking over medium high heat. Allow mixture to simmer (no lid on pan) for at least 10 minutes or until the mixture turns a bit darker. Add vanilla and remove from heat. If mixture is not as thick as you’d like it you can cook it longer to reduce the moisture but make sure you stir often and only allow it to simmer (and not reach a boil). Since there’s cream in it it has the susceptibility to scorch if heated excessively. Serve with fruit such as Fuji apple slices, salty items such as pretzels or pork rinds or drizzle over freshly popped popcorn. Yum!
