Ma ki dal
1 cup whole black urad
1 tablespoon rajama
Soak together for 8 hours
2-3 dry red chilies, 5-6 garlic cloves and 1/2 inch ginger. Grind to a paste without water.
3 tomatoes boiled, peeled and puréed.
Wash and clean dal. Put it in the pressure cooker. Add water 1 inch above the dal. Add 1 inch dalchini, 2 big cardamom 5-6 cloves 2 bay leaves . Salt and 1 tablespoon of ghee. Half of chiilli garlic paste. Pressure cooker on a low flame for 35-40 minutes.
Till then in a kadhai heat a spoonful of oil, add tomato purée add half of the chilli garlic paste, fry well till oil starts oozing out. Add
2 teaspoon coriander powder
1/2 teaspoon aamchur
1/2 teaspoon sunth/ dry ginger powder
1/2 teaspoon nutmeg powder.
Fry for a few seconds turn the gas off. Once the pressure drops on its own mix dal in this masala add water if required and let it simmer for 10 minutes stirring occasionally. Add
50 grams of white butter.
Simmer for another 5 minutes
At the end add
1 teaspoon kasoori methi and
1/2 cup cream. Serve with nan or rice
