Summary: These wings feature a sophisticated balance of smoky, citrus, and subtle sweetness, accented by an infusion of tequila. The chicken is subjected to a low-and-slow marination process, lightly smoked with applewood, and subsequently enveloped in a viscous chile-lime agave glaze, resulting in a highly desirable, caramelized exterior.
Ingredients:
3 lbs Chicken Wings
Marinade:
(Utilize 1 fluid ounce of tequila per pound of chicken wings)
3 fl oz Blanco Tequila
1 Small Onion, coarsely chopped
4 Cloves Garlic
1 Jalapeño pepper
Fresh Lime Juice ( from approximately 3 limes)
Proprietary Chile-Lime Rub (formula provided below)
Marination time: A minimum of 3 hours is recommended; overnight marination is suggested for optimal flavor integration.
Chile-Lime Rub
2 Tbsp Chili Powder
1 Tbsp Smoked Paprika
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
Zest of 2 Limes
1–2 Tsp Salt (season to preference)
1 Tbsp of Pepper
Glaze
1.5 Tbsp Unsalted Butter
¾ Cup Blue Agave Nectar
¼ Cup Chile-Lime Rub
2 Tbsp Minced Garlic
¼ Cup Fresh Lime Juice
Optional: A modest measure of tequila may be added for intensified heat.
Note: The balance of sweetness, pungency, and acidity should be adjusted according to personal taste preferences.
These instructions will guide you through preparing, grilling, and glazing your wings to achieve a perfect blend of smoky flavor and crispy skin.
1. Prepare the Marinade
Combine or blend all marinade ingredients.
Thoroughly coat the wings with the mixture.
Cover and refrigerate the wings for a minimum of three hours to marinate.
2. Set Up the Grill
Ignite the Oklahoma Joe’s Blackjack Kettle grill.
Use applewood chunks to establish a clean, aromatic smoke profile.
3. Smoke and Grill the Wings
Crisp the Skin: Begin by placing the wings directly over the heat source. Maintain constant vigilance to prevent charring while achieving the desired skin crispness.
Infuse Smoke: Immediately move the wings to the indirect heat zone. This allows them to absorb the smoke flavor and continue cooking thoroughly.
4. Check Internal Temperature
Remove the wings from the heat once they reach an internal temperature of 158–160°F.
5. Apply the Glaze
While the wings are resting, gently simmer the glaze ingredients until the mixture is warm and has a glossy consistency.
Immediately toss the resting wings in the heated glaze. The carryover heat will safely raise the final internal temperature to 165°F.
6. Serve
Garnish with fresh cilantro.
Serve immediately for optimal enjoyment.
