KOSIMBIR (KOSAMBI) - MOONG DAL SALAD
Can’t imagine any day without moong dal for protein and salads in my plate. And therefore, this South Indian tempered salad kind of tops my list of salads. Completely desi style, no fancy ingredients, all that crunchy & chewy texture and best part is the Tadka on top.
Here is the recipe -
Take 1 cup moong dal (soaked for 2 hours)
Cook the dal (do not make mushy; the grain should stay intact) - understand in Karnataka they don’t boil so depending upon the quality of dal, very gently cook it
cool it down
now add cucumber, roasted crushed peanuts, fresh coconut, coriander leaves, pomegranate
add roasted jeera (roasted cumin seeds), salt and freshly squeezed lemon juice
mix everything
now my favourite part is to make tadka
in a pan take some oil, curry leaves & mustard seeds
add chopped green chillies and ginger
tadka is ready; drizzle it over salad
Delicious Kosambari Moong Dal Salad is ready. Actually, this is a complete meal by itself; you actually don’t need anything else with it. Enjoy healthy lifestyle with these kind of salad variations that make food experience so rich.
