make 4 8" pies
egg pie crust ingredients
1200 grams all purpose flour
1/2 cup sugar
1 teaspoon salt
450 grams shortening
3/4 cup to 1 cup cold water
egg pie filling
1.5 liters of water (1500 ml.)
375 ml. or 1 can evaporated milk
1 kilo milk powder (milk boy) 140 pesos per kilo
800 grams white sugar
16 eggs (separate the two egg whites for the making of merengue, it make the top of the egg pie turns brown
strain the liquid filling twice to remove the little pieces od egg shell and to make the custard smoother
start baking (putting the pies in the oven) at the temperature of 120 °C and let it rise to the temperature of 180°C and bake for 35 to 45 minutes until the center is firm when touch but still wiggle a little
