Poha Chiwda (Rice flakes savory snacks)
Chiwda made out of Poha (Rice flakes) is an all-time favorite snack. Light on tummy, easy to digest, little spicy and savory chiwda is must have item for Diwali.
Ingredients:
Thin Rice Flakes (Patal Pohe) – 4 cups
Puffed Rice (Kurmure) – 1 cup (optional)
Peanuts (Shengdane) – 1 cup
Cashew (Kaju)- ½ cup
Dry coconut thin slices – ½ cup
Sesame seeds(Til)- 2 tablespoons
Tempering (Fodani)-
Oil- ¾ cup
Mustard seeds(Mohari)- 1 teaspoon
Cumin Seeds(Jeere)- 2 teaspoons
Turmeric powder(Halad)- 1 teaspoon
Green Chilies cut into pieces – 4-5
Curry Leaves- 10-12
Salt- 1 teaspoon
Directions:
1. Fry Cashews and Peanuts in half of the oil and keep aside.
2. In the same oil add remaining oil. Add Mustard seeds. Once mustard seeds start spluttering add cumin seeds, turmeric powder and chilies.
3. Add salt and sesame seeds. Once sesame seeds turn bit brown add curry leaves, fried peanuts and cashews and stir well.
4. Add Rice flakes and Puffed rice. On low flame keep stirring 10-15min so that tempering will get evenly mixed on rice flakes and rice flakes will become crispy due to heat.
5. Once rice flakes get crispy, turn off the flame and let it cool completely. Chiwda is ready for you. Enjoy!
