🍲 Mukkala Pulusu – Andhra-Style Tamarind Vegetable Stew
Ingredients:
Mixed vegetables (commonly used: sweet potato, drumstick, carrot, lady finger, bottle gourd)
Toor dal 1/2 cup
Tamarind pulp (soaked and extracted from tamarind)
Grated or powdered jaggery 1 cp
Turmeric powder - 1tsp
Green Chillies - 5
Salt to taste
Water
pulusu podi ingrediants:
urad dal 1 spn
rice 1 spn
Dhaniya 1 spn
til 1/2 spn
mustard 1/4 spn
fenugreek 1/4 spn
jeera 1 spn
red chillies 6
pepper 1/4 spn
curry leaves few
dry coconut half piece
Preparation : fry all the ingrediants in a spoon of oil till golden brown.
For Tempering (Tadka):
Mustard seeds
jeera
Dried red & green chilies
Curry leaves
Asafoetida (hing)
Oil
🥣 Preparation Method:
Cook the vegetables:
Wash and cut the vegetables into medium-sized pieces.
Boil them in enough water with a little turmeric and salt until just tender.
Add tamarind and jaggery:
Once the vegetables are cooked, add tamarind pulp, add cooked dal and let it simmer.
Add jaggery to balance the tanginess with sweetness.
Stir in green chillies and adjust salt as needed.
Let the mixture boil for a few more minutes until the flavors blend and the stew slightly thickens.
Prepare the tempering:
Heat oil in a small pan.
Add mustard seeds, let them splutter.
Add fenugreek seeds, dry red chilies, curry leaves, and a pinch of asafoetida.
Pour this tempering over the pulusu and mix well.
🍛 Serving Suggestion:
Serve Mukkala Pulusu hot with plain steamed rice and a dollop of ghee. It also pairs well with mudda pappu (plain cooked toor dal) on the side for a traditional Andhra meal.
