Ingredients
• 500 g minced beef
• 1 cup rice
• 1 red onion, finely chopped
• 2 cloves of garlic, finely chopped
• 3 eggs
• Juice of 2 lemons
• Mixed fresh herbs of your choice
• Salt and pepper
• Vegetable stock
• Olive oil
Method
1. Start with the rice. Finely chop the onion and garlic and cook them gently in olive oil for a couple of minutes.
2. Add the rice and cook for another 3 minutes, stirring well.
3. Transfer everything to a bowl. Add the minced beef, herbs, salt, and pepper. Mix very well.
4. Shape the mixture into meatballs.
5. Place the meatballs in a pot, pour in enough vegetable stock to cover them, place a small weight or plate on top, and cook on low heat for 30–40 minutes.
Egg & Lemon Sauce (Avgolemono)
1. In a bowl, mix the egg yolks with the lemon juice.
2. Add a little warm cooking liquid slowly while whisking, to prevent the eggs from splitting.
3. Gently pour the sauce back into the pot and shake the pot carefully to combine.
4. Cook for 5 more minutes until the sauce reaches the thickness you like.
