Delicious Brioche Pudding - it's very similar to bread pudding and can be made with croissants or sliced bread. Perfect winter comfort food.
It's super simple and tastes amazing!

►You will need:
5-6 brioche
100g sugar (1/2 cup)
20-30g butter - melted (1-2 tablespoon)
120ml milk (1/2 cup)
40g dried fruit (1/3 cup approx)
4 eggs
1-2 teaspoon vanilla
1 teaspoon nutmeg or other spice
Method:
1.Slice the brioche diagonally reserving the ends
2.Melt and butter your dish with a pastry brush (you can use anything similar in size to 6x8 inch dish)
3.Mix all the ingredients except the brioche in a large bowl
4.Layer the brioche in the dish starting with the ends and making a pleated pattern with the top layers - be sure to distribute the egg mixture between each layer
5.Cover lightly in foil and bake in a preheated oven at 180c / 350f / GM 4 - 40 minutes covered the remove the foil for the final 10 minutes. This will need 50 minutes but could take up to an hour depending on your oven.
This will keep for up to 3 days covered and refrigerated.
Brioche is also known as Pain Au Lait :)
