This apple carrot cake is such a nice treat for breakfast, as a snack or nice as a dessert! I personally really like the crunchy crust of this cake with it`s soft and moist interior! And with almost only whole foods and no sugar added, I guess you can call this a healthy cake! Here`s what you need...
Healthy Apple Carrot Oatmeal Cake
INGREDIENTS (6-8 slices)
1 + 1/2 cup (150 grams) oat flour*
1/2 cup (50 grams) quick oats*
1 tbsp (4 grams) cinnamon**
1 tsp (4 grams) baking powder
3 tbsp (24 grams) raisins
2 tbsp (20 grams) dried apricots, finely diced***
3 eggs (165 grams)
1 cup (250 grams) milk of choice****
1 tsp (3 grams) vanilla extract
2 tbsp (16 grams) mild olive oil
1 + 1/2 cup (180 grams) apple chunks*****
1/4 cup, packed (45 grams) carrot, finely shredded
INSTRUCTIONS
1. Grease a 20 x 8 cm (8 x 3 inch) cake tin and line it with parchement paper. Set aside.
2. Take a large bowl. Pour the oat flour, quick oats, cinnamon, baking powder, raisins and diced dried apricots into the bowl. Whisk with a whisk or fork until all inrgedients are mixed well. Set the bowl aside.
3. Start to pre-heat your oven here on 180C or 360F.
4. Take a small bowl. Pour the eggs, milk and vanilla extract into the bowl. Blend with an immersion blender or whisk with a whisk or fork into a creamy mixture.
5. Add the egg-milk mixture to the dry ingredients in the large bowl. Add the mild olive oil and mix with a spatula, spoon or fork until all ingredients are almost fully incorporated into a batter.
6. Add the apple chunks and shredded carrot. Stir them into the batter and mix until all ingredients are fully incorporated.
7. Scoop the batter out of the bowl with a large spoon and transfer it to the greased and lined cake tin. Distribute it evenly with a spatula or back of a spoon.
8. Transfer the cake to to the pre-heated oven and bake for 50 minutes on 180C or 360F.
9. Let it cool on a rack and in the tin for at least 30 minutes.
10. Transfer to a cutting board or plate. Slice it into 6-8 slices and enjoy!

NOTES
I used gluten free oat flour and gluten free quick oats.
** You can use pumpkin spice instead of cinnamon.
*** You can also use 5-6 tbsp (40-48 grams) of raisins and leave oat the apricots if you want.
**** I used semi-skimmed milk.
***** I used 1 large Jonagold apple. I guess Galia apple will do as well.
