⇒ Recipe 1 (Breakfast) Quiche: Sautee veggies of choice. Add filling of 4 eggs, 1 16 oz egg white carton, 1/2 cup milk and 1/4 cheese to pie crust with veggies, season and bake at 350 for 30 mins. You can also make this with a filling of just veggies and egg whites to make it healthier!
⇒ Recipe 2 (Lunch): Bean and Rice Bowls. Combine brown rice, black beans, shredded chicken or meat sub (I use jackfruit), cojita cheese, avocado and tortilla chips in a bowl. That's it! You can add cilantro or sour cream on top for more flavor
⇒ Recipe 3 (Dinner) Turkey, veggie 3 bean chili: sautee 1 small white onion with 3/4 lb ground turkey. Add bell peppers or veggies of choice, 1 bag frozen corn, 2 cans of beans (I use a 3 bean mix), 1 jar of crushed and once jar of diced tomatoes (add water if desired for thinner chili). Season with 1 tablespoon cumin, 1 tablespoon chili powder, 1/2 tsp cayenne, salt and pepper.

Other notes, I typically meal prep for M-F and keep 3 servings in the fridge and 2 in the freezer. I reheat in the toaster oven at 350 for 10-15 mins.
