Recommended workaround:

Disable XFCE compositing during recording

Use Game Capture instead of Display Capture

Ensure NVIDIA, Vulkan and MangoHud layers are correctly declared in NixOS configuration

Avoid global MangoHud activation; enable it per application only

Once properly configured, OBS recording on NixOS is stable and consistent.
