Ingredients:
1 liter of high-proof alcohol (at least 70% ABV, such as Everclear)
Wormwood (Artemisia absinthium) - about 30 grams
Green anise - about 15 grams
Fennel seeds - about 15 grams
Other herbs (optional, and in small amounts) such as hyssop, lemon balm, angelica, coriander, and mint
Water
Sugar (for sweetening to taste)
Instructions:
Crush the herbs (wormwood, anise, fennel, and any optional herbs) to release their flavors. You can use a mortar and pestle for this.
Combine the crushed herbs with the high-proof alcohol in a large, sealable glass jar.
Seal the jar and let the mixture steep in a dark, cool place for at least a few days, shaking the jar occasionally.
After the steeping process, strain the liquid through a fine mesh or cheesecloth to remove the solid herb particles.
Dilute the resulting liquid with water to achieve your desired alcohol content. Traditionally, absinthe is diluted to around 50-75% ABV.
