I was attempting to make souffle pancakes but my whisking machine couldn't whisk it till it was firm, even after 30min of whisking!!! So, I had to keep moving on. It was airy and soft but definitely lacked the 2-inch height and the SUPER airy part of it haa. It was still very good so once I get a handheld mixer, I will try again!! Was inspired by So Yum Cooking.
Recipe/ingredients:
2 eggs; separate the yolks and whites
Yolk mixture:
1 TBS of milk
1 TSP of vanilla
mix
1/4 C of flour sifted
1/4 TSP of baking powder
Egg white: beat until stiff peaked. Add a few TBS of sugar at a time during the beating process.
Fold 1/3 of egg white into yolk mixture and mix
Add another 1/3 and fold gently
Yolk/white mixture pour back into the white mixture and fold until well combined
Low medium heat, add enough oil on the bottom
Pour a bit of batter and add 1 TBS of water on the side and pour a bit more batter on top of the current pancakes
Cover and cook for 4-5 min
Uncover and flip
Add 1 TBS of water around the batter and cover for 4-5min
