Ingredients:
2 cups pumpkin, peeled and cut into cubes
2 tbsp desi ghee
3–4 garlic cloves, finely chopped
1 medium onion, thinly sliced
2 medium tomatoes, chopped
½ tsp turmeric powder
1 tsp garam masala
Salt, to taste
Water, as needed
Instructions
Heat desi ghee in a pan over medium heat.
Add chopped garlic and sauté until fragrant.
Add sliced onions and cook until soft and lightly golden.
Add chopped tomatoes and cook until they turn soft and release oil.
Add turmeric powder, garam masala, and salt. Mix well.
Add pumpkin cubes and stir to coat them with the masala.
Cover and cook on low heat, stirring occasionally. Add a little water if needed.
Cook until the pumpkin is completely soft and reaches a purée-like consisten
Taste and adjust seasoning. Serve hot.
