Recipe:
2 cups of cooked sticky rice (divided into 2 portions)
6 Tbsp of water (Divided into 2 portions)
1 drop of food coloring
1/3 Cup of Brown Sugar
1/2 Cup of Palm Sugar
Direction:
Divide the water and rice into 2 different bowls.
Step 1: For the color portion, dissolve your choice of food coloring into the 3tbsp water the mix with half of the cooked rice until well combined. Set aside
Step 2: Add in the last 3 tbsp of water to the remaining of the cooked rice to loosen up the rice. Set aside
Step 3: Use a mold to help form your rice into a disc. Do not apply too much pressure to the rice as you mold it down. If you make the rice (disc) too thick and too tight, it will take longer to dry the rice. Once you are done molding the rice, let it sun dry for 1 day or until completely dried out (depending on the weather)
Step 4: After the rice is completely dried out, fry them on low heat with cooking oil until the rice float to the top, then you should be done. Do not over cook, it will be burned easily.
Step 5: In a non stick pan under low heat, melt the brown sugar and palm sugar until you have a thick runny texture. Turn off heat and drizzle it over the rice crackers. If the sugar mixture becomes harden, you can reheat the sugar with about 1tbsp of water.
