Ingredients
Chicken & Marinade
Boneless chicken thighs or breasts, cut into long strips
1 tbsp sugar
1 tsp salt
2 tbsp coconut milk
2 tbsp soy sauce
1 garlic clove, minced
1 thumb-sized piece ginger, grated
1 tsp ground coriander
1 tsp curry powder
1 tsp turmeric
Juice of 1 lime
Peanut Sauce
2 heaped tbsp red Thai curry paste
Coconut milk (enough to make a pourable sauce)
1 tsp fish sauce
1 tbsp sugar (palm sugar preferred)
200g Peanut butter or to taste
1/4 cup soy sauce
1 tbsp black vinegar
Method
1. Soak the skewers
Soak bamboo skewers in water for at least 20–30 minutes to prevent burning.
2. Make the chicken marinade
In a bowl, combine sugar, salt, coconut milk, soy sauce, garlic, ginger, ground coriander, curry powder, turmeric, and lime juice.
Mix well until fully combined.
3. Marinate the chicken
Add the chicken strips and toss until evenly coated.
Marinate for 2–3 hours for best flavour
Minimum 30 minutes if short on time
4. Skewer the chicken
Thread the marinated chicken lengthways onto the soaked skewers.
5. Make the peanut sauce
Heat a saucepan over medium heat.
Cook red Thai curry paste for 1 minute
Gradually stir in coconut milk until smooth
Add fish sauce and sugar
Whisk in peanut butter until creamy
Stir in soy sauce and black vinegar
Simmer gently and adjust thickness as needed. Keep warm on low heat.
6. Cook the chicken
Heat a pan or grill pan over medium-high heat.
Lightly oil the surface
Cook skewers for about 5 minutes per side
