Recipe for High Fiber Bread
🍞 Cozy High-Fibre Seed Bread
Nourishing • Filling • Gentle on Blood Sugar
This is a dense, satisfying bread inspired by traditional seed loaves. A little goes a long way — perfect toasted with cheese, eggs, or nourishing toppings.
🌾 INGREDIENTS
Dry ingredients
1 cups almond flour
1 cups mixed flours (e.g. buckwheat, tiger nut, ground linseed)
1 cup of arrowroot flour
½ cup coconut flour
2 tablespoons psyllium husk
2 tablespoons chia seeds
1½ cups mixed seeds
(pumpkin, sunflower, sesame, linseed, poppy, hemp — use what you love)
1 teaspoon sea salt
Yeast mixture
18 oz (about 2¼ cups) lukewarm water
4 tablespoons instant yeast
2 tablespoons honey
For topping (optional)
Shelled hemp seeds or mixed seeds
🥣 METHOD
Activate the yeast
In a large jug or bowl, mix the lukewarm water, yeast, and honey.
Stir well and leave for 5–10 minutes until frothy.
Bloom the fibres
Stir the chia seeds and psyllium husk into the yeast mixture.
Let sit for a few minutes until it thickens slightly.
Mix the dry ingredients
In a large bowl, combine all flours, seeds, and salt.
Combine
Pour the wet mixture into the dry ingredients and mix thoroughly.
The dough will be thick and heavy — this is normal.
Shape & rise
Spoon into a lined loaf tin. Smooth the top and sprinkle with seeds or hemp.
Cover loosely and allow to rise for 30–45 minutes in a warm place.
🔥 BAKING INSTRUCTIONS (UK OVEN)
Because this loaf is larger and denser than standard recipes:
Preheat oven to 220°C (fan 200°C) 425°F in a standard USA oven
Bake for 15 minutes
Reduce temperature to 190°C (fan 170°C)
Continue baking for 35–40 minutes
The loaf should feel firm and sound hollow when tapped.
If the top browns too quickly, loosely cover with foil.
❄️ COOLING & STORAGE
Allow to cool fully before slicing (important for texture)
Keeps well wrapped for several days
Slices freeze beautifully — toast straight from frozen
🧀 SERVING SUGGESTIONS
Toasted with mature cheese
Scrambled eggs on seeded toast
Sardines or mackerel for a nourishing meal
Avocado or nut butter for a filling snack
This bread is very filling — one slice is often enough.
