How to Fillet Raw Fish

How To Filet a Cooked Fish (Sea Bass)
1.Using a dinner knife in one hand and a spoon in the other, make an incision under the fin below the head
2.Then run the knife down the center of the fillet, starting at the head and ending at the tail.
3. Remove the lower filet by the belly by carefully pulling the fillet away from the bones pushing with the knife and catching with the spoon. Flip the filet on its back.
4. Repeat this same movement on the upper filet, pushing the fillet away from the bones and catching it with the spoon. Flip the upper filet onto its back.
5. Turn the fish over and repeat the process on the other side.
6. Lift the fish skeleton onto another plate.
7. Remove any fins or small bones attached the fish filets.
