lasagna noodles
1-1/4 pounds bulk Italian sausage
3/4 pound ground beef
1 medium onion, diced
3 garlic cloves, minced
2 cans (one 28 ounces, one 15 ounces) crushed tomatoes
2 cans (6 ounces each) tomato paste
2/3 large can water (to rinse can for sauce)
3/4 teaspoon salt, divided
1/4 teaspoon coarsely ground pepper
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
4 cups shredded part-skim mozzarella cheese
1 cup grated Parmesan cheese
Instructions:
Prep all ingredients: cut onions and garlic. Season all meat, and open all cans. Preheat oven to 375F
Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, cook sausage and beef mixture until browned. Break meat up into small pieces as you cook it.
Add in onions and cook for an additional 3-4 minutes then add garlic. Cook for another 2-3 minutes.
Add in tomato paste and stir it in thoroughly. Cook the mixture for 3-5 minutes then add the rest of the tomatoes. Fill large can 2/3 with water swirl and pour into sauce.
Reduce sauce for 20-30 minutes on medium low heat ( turn knob slightly less than halfway)
Once sauce is fully cooked build lasagna in 13x9 pan. Add a tiny layer of sauce, ricotta, and other cheeses to bottom on dish (sauce first) to keep pasta from burning. Then build in this order: pasta (on top of bottom layer) meat sauce, ricotta, mozzarella and Parmesan, pasta, ricotta, Parmesan and mozzarella, meat sauce, pasta, ricotta, meat sauce, hearty amount of mozzarella and Parmesan to help build nice cheesy top layer.
Cover with tin foil and put in oven for 25 minutes. Remove from oven, uncover and add more cheese if some got stuck to foil. Put back in oven for 20 minutes uncovered. Turn oven to broil for 2-3 minutes to crisp up cheese further. Take out and let rest for 10-15 minutes before serving.
