When I was travelling in Sydney, Australia I have a chance to try the famous watermelon cheesecake and I will never forget its unique taste. Reminiscing the taste - Now, I have recreated this watermelon cake at home with my own simple recipe without losing its original taste. The sponge fingers in the cake will absorb the watermelon juice and produce a sweet aromatic taste with the combination of rose water. This watermelon cheesecake can be kept in the fridge for 2 days without becoming too soggy. Have fun and enjoy!
西瓜蛋糕是悉尼出名的甜点,每次去都要排队。当我回国后,非常想念西瓜蛋糕,我便自己做了类似的蛋糕。其实悉尼的西瓜蛋糕味道主要是西瓜里有玫瑰水的香味,配搭坚果香,草莓和奶油香。有些做不成功的例子是因为蛋糕太水了,西瓜是很多水分的水果,所以我便创了这简单方法,使用sponge fingers吸收西瓜的水分,不需要烘烤,希望你们会喜欢。

Ingredients: (NO OVEN needed)
【CREAM】
Mascarpone cheese 250g | 玛斯卡彭芝士 250 克
Soft cheese 250g | 软芝士 250 克
Condensed milk 4 tbsp (adjustable) | 炼乳 4 汤匙 (可更改)
Gelatine 1 tsp: 2 tbsp water (mix) | 明胶 1 茶匙 :2 汤匙 水(混合)
Rose water 1 tbsp (adjustable) | 玫瑰水 1 汤匙 (可更改)
【MIDDLE LAYER】
Watermelon | 西瓜
Rose water | 玫瑰水
【BASE】
Sponge fingers 1 pack | 海绵手指 1 包
Brown sugar 1 tbsp | 红糖 1 汤匙
Rose water 1 tbsp | 玫瑰水 1 汤匙
Hot water 300ml | 热水 300 毫升
【TOPPING】
Strawberries | 草莓
Dried rose petals | 干玫瑰花瓣
Pistachio nuts (cut small pieces) | 开心果
Arrowroot powder (optional) | 葛粉

▶ Dry the watermelon pieces before placing on the cream to avoid the cake becoming watery
▶ Amount of rose water used is up to personal preferences
▶ Mix the gelatine with water for 5 mins and heat the bowl on hot water while stirring the mixture until the gelatine is fully dissolved
Alternatively, put the gelatine mixture into the microwave for 30 sec, make sure the gelatine is completely dissolved
▶ Quick dip the sponge fingers into rose syrup, do not over soak it
