This recipe is a healthy and nutritious way to incorporate more vegetables into your diet while also enjoying the delicious taste of coconut milk. It's a simple and easy-to-make dish that's perfect as a side dish or as a main course served over rice.
Ingredients:
1 cup chopped carrots
1 cup chopped green beans
2 cups chopped potatoes
1 can coconut milk
1 tsp cumin powder
1 tsp mustard seeds
1 tsp turmeric powder
1 tsp chili powder
1 tsp salt
1 tbsp vegetable oil
2-3 curry leaves (optional)
Instructions:
Heat the vegetable oil in a large skillet over medium heat.
Add the cumin and mustard seeds to the skillet and sauté until they start to pop.
Add the chopped carrots, green beans, and potatoes to the skillet and sauté for about 5-7 minutes.
Add the turmeric powder, chili powder, curry powder and salt to the skillet and stir well to coat the vegetables.
Pour the can of coconut milk into the skillet and stir well.
Cover the skillet with a lid and let the vegetables cook in the coconut milk for about 15-20 minutes, or until the vegetables are tender.
Serve the vegetable mix hot as a side dish or over rice as a main course.
