SWEET POTATO COTTAGE PIE:
Recipe is by Sophie Richardson

2 large carrots
1 medium white onion
4 large sweet potato
1 cup of stock (I used bone broth)
2 cups of peas
500g mince beef
Salt and pepper
Sprig of rosemary
5 tbsp tomato puree
-garlic

Peel and chop carrot and onion, sweet potato

Oil in pan - add onions, carrot, salt pep garlic

Soften that all, remove from pan and set aside

At same time, boil water for chopped sweet potato’s

In the same pan that you cooked carrot, onion etc in, add more oil and add beef

Brown off and break up mince, add cup of stock, tomato puree, 2 cups peas and add the carrot and onion back in

Once potato’s are soft, drain and mash. I add butter and salt and pepper.

Spread on top of beef mix and put in 180 fan oven for about 20 mins, I use oven proof pan
