Imagine if cheesecake and crème brûlée had a dramatic love affair in the Basque Country of Spain. That’s San Sebastian Cheesecake. It’s intentionally burnt on top (on purpose!), creamy in the center, and beautifully rustic. No crust, no chill—just bake, cool, devour, and wonder why you haven’t been making it your whole life.

🥄 To Make This Recipe, You’ll Need:

🧀 For the Homemade Cream Cheese:
• 1 liter milk (about 4 ¼ cups)
• 200 ml fresh cream (about ¾ cup + 1 tbsp)
• 3 to 4 tbsp lemon juice (or white vinegar)
• ½ tsp salt

🧁 For the San Sebastian Cheesecake:
• 400 grams homemade cream cheese (approx. 1 ¾ cups)
• 100 grams sugar (½ cup)
• 3 eggs
• 1 tsp vanilla essence
• 1 tsp salt
• 200 ml fresh cream (about ¾ cup + 1 tbsp)
• 2 tbsp all-purpose flour

Preheat your oven to 230°C (446°F). Bake the cheesecake for 30–35 minutes, or until the top is gloriously burnt and the center still has a little jiggle. Let it cool completely (if you can resist), then slice and serve!
