The "oil is bad" phobia is getting ridiculous. The little bit that Cara and I eat is not a problem, ESPECIALLY when you eat lots of raw whole plant foods full of fiber and nutrients that counter that bit of oil. If you are that fanatical about stuff, throw away your computer, cell phone, car, house, clothing and stop breathing the air. Olive oil has been used for thousands of years and a bit of coconut oil wont kill you... especially if you re healthy. People who are healing some kind of health condition should be more strict of course, but if you are pinnacle of health and eating mainly a raw vegan diet, then a bit of oil and cashews now and then is nothing to worry about. The popularity that oils are bad comes from studies that show some of these "vegetable oils" raise homocysteine levels, which is disastrous to the heart and arteries. Lots of vegans and vegetarians today load up on these high omega 6 processed dead oils which creates imbalances and health destroying effects, resulting in vegetarians having the same heart attack rates as meat eaters. Most people who eat do so for flavor, not health. They also cook with oils which destroys the lipase enzymes and quickly renders any omega 3s useless. Vegans and vegetarians do not methylate well. They are usually low on folate and b12 and when high omega 6 oils come into the body and cannot be processed well, they get elevated homocysteine levels. The raw, organic, cold pressed extra virgin oils I recommend are NOT these damaging oils these studies are referring to. Olive oil is an aromatase inhibitor and many of the longest living people in the world consume it. I wont disagree that whole foods are not superior fats or oils, thats not the argument. Its neglecting oils in the diet in fear that your health will be compromised is the issue. Our hormones are regulated by natural fats. Our liver, brain and heart function on lipids and are protected by them.
The only real negatives to oils is that they enter the blood stream quicker, but who consumes just oil? Everyone has it with food and foods have fiber and other elements to buffer that. Its kind of funny because Caldwell Essylsten is very heavy in to flax seed, which is highly goitrogenic. Goitrogens suppress the thyroid, which increases inflammatory homocysteine. Yet at the same time, he claims that oils damage the endothelial lining, but there are numerous studies that show the sterols in olive oil have anti-inflammatory effects.

If the oil was causing damage to the endothelial lining as Caldwell Essylsten falsely claims then there would be an inflammatory, not an anti-inflammatory response. Furthermore, inflammation such as that, results from the thyroid suppressing flax seed he recommends, which does lead to endothelial damage as the inflammation leads to the production of reactive oxygen and reactive nitrogen species. So that is one of his mistakes. He also fails to take in to account that fish oil provides the omega 3 fatty acids EPA and DHA, which is not supplied by flax or chia seed making it superior to seed oils. He also states that certain cultures lack heart disease due to statins and that it is acceptable to eat copious amounts of green leafy vegetables if on Coumadin -Warfarin. Again, what studies is this guy reading because he is overlooking a lot of basic facts. Statins merely lower cholesterol, which IS NOT a factor for heart disease.
