Ingredients
Flours
• Jowar flour – 1½ cups
• Ragi flour – 1 cup
• Roasted chana flour (sattu ) – 1 cup
Ghee
• Melted ghee (for roasting flours) – ¾ cup
• Extra ghee for roasting nuts – 2 tbsp
Dry fruits & seeds
• Almonds – ½ cup
• Walnuts – ½ cup
• Black sesame seeds – 2 tbsp
• White sesame seeds – 2 tbsp
Sweetener & spices
• Jaggery – 1 cup
• Water – ½–¾ cup
• Cardamom powder – 1- 1½ tsp
• Dry ginger powder – 1 tbsp
👩🍳 Method
1️⃣ Roast dry fruits & seeds
• Heat 2 tbsp ghee on low flame.
• Roast almonds → walnuts → black & white sesame seeds.
• Cool completely and grind coarsely.
2️⃣ Roast flours
• Dry roast jowar + ragi flour for 10–12 minutes on low–medium flame.
• Add ¾ cup melted ghee slowly, stirring continuously.
• Roast 12–15 minutes on low flame until aromatic.
• Add 1 cup roasted chana flour and roast 5–7 minutes.
3️⃣ Combine
• Add ground dry fruits & seeds to flour mixture. Mix well.
4️⃣ Prepare jaggery syrup
• Boil 1 cup jaggery with water, cardamom, and dry ginger until fully dissolved(no string consistency needed).
5️⃣ Shape ladoos
• Add hot jaggery syrup to flour mixture.
• Mix well and shape ladoos while warm.
