Easy Eggless Whole Wheat Carrot Cake 🥕🍰
Soft • Moist • Naturally Sweetened
Ingredients
Wet Ingredients
Milk – 1/2 cup
Vinegar – 1 tsp
Jaggery powder – 1 cup
Oil – 1/4 to 1/3 cup
Vanilla extract – 1/2 tsp
Dry Ingredients
Whole wheat flour (atta) – 1 cup
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Cinnamon powder – 1/2 tsp
Clove powder – 1/8 tsp
Salt – 1/4 tsp
Add-ins
Grated carrot – 1½ cups
Crushed walnuts – 1/4 cup (optional)
Chopped almonds – 1/4 cup (optional)
Method
Preheat the oven to 170–180°C. Grease a cake pan and set aside.
Mix milk and vinegar and let it rest for 5 minutes.
In a bowl, add jaggery powder, oil, and vanilla extract. Mix well.
Add the milk–vinegar mixture and whisk until well combined.
Fold in the grated carrots, walnuts, and almonds gently.
Sift in all the dry ingredients and gently fold using a spatula.
Pour the batter into the prepared.
Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
Let the cake cool completely before slicing.
