This homemade tomato chutney is prepared without adding any water and without using refined sugar.
Juicy, ripe tomatoes are used so the chutney cooks in its own natural juices, giving a rich colour and thick texture.
For natural sweetness, I’ve used naakul dana (rock sugar) along with about 3 tablespoons of raisins, instead of refined sugar.
This combination adds a gentle sweetness and depth of flavour.
Mustard oil is heated and tempered with panch phoron and lightly crushed radhuni, which releases a beautiful achari aroma.
No spicy ingredients are used.
Only salt and turmeric are added, then the tomatoes are covered and cooked until soft.
After mashing, naakul dana and raisins are added and cooked until fully dissolved and blended.
At the final stage, a natural souring element is added to balance the taste, enhance aroma, and help extend the shelf life naturally.

This chutney has a perfect balance of sweet and mildly tangy flavour with a subtle achari twist.
