Ingredients For Lamb Shank Vindaloo :
For Marinade :
4-5 tsp hot chilli powder - மிளகாய் தூள்
2-3 tsp Kashmiri chilli powder - காஷ்மீர் மிளகாய் தூள்
6-8 garlic cloves - வெள்ளைப் பூண்டு பற்கள்
1 small piece ginger - இஞ்சி
1 tsp mustard seeds - கடுகு
1 tsp coriander seeds - கொத்த மள்ளி
1 tsp fennel seeds - பெருஞ்சீரகம்
1 tsp cumin seeds - சீரகம்
1/2 tsp sugar - சீனி
1 tsp pepper corns - மிளகு
1 Cinnamon Stick - கறுவா பட்டை
5-8 Cardamom - ஏலக்காய்
5-8 cloves - கிராம்பு
1/4 cup white rice vinegar or white vinegar - வினாகிறி
1/4 cup white wine or coconut milk - வைன் / தேங்காய்ப்பால்
1 bayleaf - பிரியாணி இலை
salt - உப்பு

Vindaloo :
4 Lamb Shanks - ஆட்டுக்கால்
2-3 star anise - ஆண்ணாசிப்பூ
2 -3 onions - வெங்காயம்
Curry leaves (optional) - கறூவாஇலை
oil - எண்ணெய்

Ghee & Saffron Rice : நெய் சோறு
1/2 onion - வெங்காயம்
garlic n ginger paste - பூண்டு & இஞ்சி
small cinnamon stick - சிறிய கறூவா பட்டை
1 tsp pepper corn - மிளகு
6-8 cloves - கிராம்
6-8 cardamom - ஏலக்காய்
1 star anise - அண்ணாசிப்பூ
curry leaves - கறுவா இலை
pandan leave - ரம்ப
saffron (optional) or turmeric powder - குங்குமப்பூ / மஞ்சள் தூள்
ghee or butter - நெய் / பட்டர்
salt - உப்பு
