Ingredients:
Prosciutto
Arugula
Spaghetti
Pesto sauce
Chicken breast
Olive oil
Chicken broth
Butter
Kosher salt
Pepper
Garlic powder
Lemon
Heavy cream
Parmesan cheese
Directions:
1. Boil two cups of heavy cream, 1/2 cup chicken broth and juice of half of lemon (cook until sauce thickens)
2. Add parmesan cheese, salt, pepper and garlic powder.
3. Bring a pot of water to boil with olive oil and salt over medium high heat.
4. Add pasta and cook until al dente (approximately 11 mins)
5. Make coating, add panko and 1 teaspoon of each kosher salt, pepper, parsley and garlic powder.
6. Pound chicken breast until 1/4 inch thick.
7. Set up 3 step station, seasoned flour (salt & pepper), egg wash (2 full eggs & 1 tablespoon of milk) and panko coating.
8. Coat chicken in these steps, flour, egg wash and panko.
9. Heat skillet over medium high heat with 3 tablespoons of olive and 4 tablespoons butter, bring to a sizzle.
10. Cook chicken for 3-4 mins on each side, complete as needed to prevent burning. Cook for a total of 12 mins in total.
11. Take cooked pasta, add pesto sauce over medium heat until well combined.
12. Plate, start with parmesan sauce, pasta, chicken and top with prosciutto, arugula, parmesan sauce and sprinkle with grated cheese.
