Once popped, the steam continues to escape, and the gelatinized starch solidifies as it cools, preserving the popcorn's shape.

Not all corn can pop. Popcorn is a special variety known as Zea mays everta, which has the right balance of moisture and a hard outer shell conducive to popping. Other types of corn lack the hard shell or the right moisture content, making them duds in the popcorn world.
