Crocchette di patate con mozzarella
Golden, crispy potato croquettes filled with a luscious core of melted mozzarella. Each bite offers a perfect balance of creamy, cheesy goodness encased in a light, crunchy shell, crafted with Mama’s love.
Unlocking core childhood memories: I can still see her at the counter, gently rolling the crocchette in breadcrumbs, her hands moving with the rhythm of a thousand times before, carefully tucking a piece of mozzarella into the center of each one. As I child, I would stand on tiptoes, trying to peak over the stove, eagerly awaiting the moment when the golden crocchette would emerge from the pan, perfectly crisp on the outside and irresistibly creamy on the inside.
Ingredients:
12 medium size russet potatoes
1 lb Cubed mozzarella
4 oz of 2% milk
3 eggs
3 cups of breadcrumbs
Salt and pepper to taste
Instructions:
Once your potatoes are cut in four, place them in a large pot and cover in cold water.
Cook potatoes until they are fork tender. Add salt to water.
Strain potatoes well.
Put them back in the pot and pass it through a potato ricer. Do not allow the potatoes to cool. salt and pepper to taste. Combine well.
Form in a ball and place mozzarella in the center.
Seal well.
In another bowl beat 3 eggs and add 4 oz of milk. Roll potato balls in egg mixture and then in bread crumbs.
Prepare your frying pan with plenty of vegetable oil at medium high. Fry until golden brown. See video for further instructions. Enjoy
