Heavenly delicious with the sweet aroma of lemongrass ~~~!! Hmmmmm!!
Seafood skewers (Satay Lilit)
Ingredients:
200g fish fillet
120g prawn meat
2tbsp seafood spice paste
5pcs kaffir lime leaves(sliced)
3pcs chili padi (chopped)
15stalks lemongrass (cleaned and trimmed to 15cm length), oil for brushing
Seafood spice paste ingredients:
A)120g red chilies, 2 cloves garlic, 60g shallots ,60g tomato, 10g ginger, 8pcs candlenut, 1tsp coriander seeds, 1tsp belacan powder (toasted), 2 tsp turmeric powder, 50 ml water.
B) 2 pc Assam Keping, 3/4 tbsp salt, 1 tsp sugar, 3 bay leaves (daun salam ) , 2 stalks lemongrass (bruised)
Method:
1.combine all spice ingredients (A) in food processor and blend.
2.In a wok, add in the blended mixture and ingredients(B) and saute over medium heat until water is evoprated and turn into golden color.
Method to prepare seafood skewers:
1.MInce the fish fillet and prawn meat very finely with chopper knife.
2.Add the rest of ingredients and mix well.
3.Mound a heaped tablespoon of seafood mixture over the stalks of lemongrass and chill in fridge for 1 hour. This is to prevent meat from falling off .Make sure hands are wet to enable seafood to bind easily to lemongrass stalks.
4.Grill over charcoal fire until golden brown, brushing with some oil in between.
