Fasole cu ciolan is a traditional bean stew from Romania. A simple, practical dish built around dried beans, aromatics, and time. This is everyday comfort food that warms the kitchen while it cooks and tastes even better the next day.
Ingredients:
500g smoked ham hock
300g dried white beans
1 onion, diced
1 carrot, diced
250ml pureed tomatoes
1 Tbsp sweet paprika
1 tsp smoked paprika
1 Tbsp tarragon (or thyme or oregano)
2 tsp ground coriander seeds (or cumin)
salt
pepper
Mise en place:
Soak beans overnight
Drain beans & rinse
dice carrot
dice onion
grind coriander (if necessary
Cook:
Place the ham in a large pot and cover with water
Bring to a boil
Simmer until the meat is tender, about 2-3 hours
Remove the and let cool, reserving the cooking liquid
Drain the beans, rinse, and add to broth
Add tarragon and coriander (or other herbs)
Bring to a boil, reduce to a simmer, and cook for 2 hrs or until the beans are tender
Soffritto:
Add oil to a pan over medium heat
Add the diced onions and carrots, and saute until soft
Add paprika and stir to coat
Combine:
Add the soffrito to the pot with the beans
Remove the ham from the bone (if necessary), and chop into bite sized pieces.
Add to the beans along with the tomato puree
Season to taste with salt & pepper
Simmer for 20-30min
Serve and enjoy
