Kaiserschmarrn
For two servings you will need:
140g wheat flour type 00 or type 405
4 eggs (yolks and whites separated)
250ml milk
1 tbsp sugar
1 packet vanilla sugar or a little vanilla
1 pinch of salt
30-40g butter (for the pan)
some sugar for sprinkling
Also:
applesauce
whipped cream
powdered sugar for sprinkling
1 For the fluffiest Kaiserschmarrn, first separate the egg whites and yolks. Beat the egg whites with a pinch of salt until stiff peaks form. Whisk the egg yolks with the milk, flour, sugar, and vanilla sugar until smooth, then carefully fold in the beaten egg whites
2. Melt butter in a pan, pour in the mixture, cover, and cook for about 5 minutes over medium heat. Divide into four pieces, turn over, add a little butter to the gaps, and sprinkle with sugar. Let it caramelize briefly and tear into typical Kaiserschmarrn pieces.
3. Serve with powdered sugar, applesauce, and whipped cream.
