Cheesy Zucchini Rollatini (Eggless)

👉Ingredients:
2 zucchini’s (yellow & green)
2 tsp Olive oil (to coat the zucchini)
1/2 tsp salt (to coat the zucchini)
5 tbsp Marinara sauce (I used @RaosSpecialtyFoods )
1 tbsp cheesy bread crumbs (I used @auroracp08 )
1/2 cup crumbled Feta cheese (vegetarian) I used @TreStelleKitchen
👉For the cheese filling:
1 1/2 cup of grated paneer or ricotta cheese
2 tbsp goat cheese
1 1/2 tsp chilli flakes
2 tsp oregano
1 tsp crushed black pepper
Salt to taste
10-12 fresh basil leaves
👉For the Garlic & Parsley sauce
4-5 cloves of crushed garlic
1/2 cup finely chopped Parsley
2 tbsp olive oil
Method:
Trim away the stems of the zucchini’s and slice them lengthwise into thin strips. Transfer to a tray, drizzle olive oil and season with just a little salt. Gently rub on both sides then place over a grill on high heat and cook for about two minutes on each side. Remove once done and set aside.
For the filling, in a bowl take the grated paneer and add chilli flakes, oregano, crushed black pepper, salt and goat cheese. To this add the basil chiffonade and give it all a good mix. Keep aside.
Now spread the cheese mixture evenly over each zucchini slice. Spread to cover. Roll up the slices and keep the aside. Spread the marinara sauce evenly at the bottom of a baking dish and arrange the rolled up zucchini, seem side down in the prepared dish.
Prepare the garlic and parsley sauce by simply pouring some olive oil on top. Give it a good mix and coat each zucchini roll generously with the prepared sauce. Top it with some marinara sauce, sprinkle the cheesy bread crumbs, feta cheese and pop it in the oven to bake for 30-35 minutes at 400 degree Fahrenheit.
Once done, remove from the oven and serve hot with some Italian baguette, crostini or salad!
