COWBOY CASSEROLE
Cast iron skillet (12") - could also use 8 or 9" baking dish
1 lb ground beef, drained
1 onion, chopped (saute with beef)
1 can mexicorn, drained
1 can cream of mushroom soup
1 can peas & carrots
¾ bag tater tots (give or take)
shredded cheddar - enough to top
Bake at 400 for 25-30 minutes, until tots are golden brown and casserole is bubbly
