"Grow your own scallions" Pancake

This is my gluten free version of a Korean scallion pancake. 1 egg, beaten, add 3/4 C water, slowly whisk in 3/4 C Oat flour Let your batter rest 10 minutes. You can add all sorts of things for flavoring here. Of course, as many chopped scallions as you have, a bit of salt, you can try kimchi, sesame oil, garlic powder, red pepper flakes...and you can make a dipping sauce by mixing those ingredients in soy sauce and fish sauce to taste. Cook in 1-2 TBSP or high heat oil, non stick pan, like a crepe, 2-3 minutes on each side, till golden. It's a savory pancake, so treat it so with condiments that feel appropriate.
AS FOR GROWING SCALLIONS... All you do is place them, cleaned, roots and all in a glass or jar of water and watch them grow. It's ridiculous. They're like weeds!
